Iron helps carry oxygen to your brain, muscles and throughout your body.  Vitamin C is not only good for keeping your gums, heart, and skin healthy, but it also helps your cells absorb more iron.  It's harder for your body to absorb iron from plant-based foods, which is why pairing them with Vitamin C is a smart move.
